History of the Southampton Publick House
Located in Southampton, NY, the Southampton Publick House is a landmark for beer. Since the 1800s, beer has been created and served in the Publick House’s previous incarnations as a speakeasy, watering hole and restaurant.
During Prohibition, on the site where Southampton Publick House stands today, the original proprietors operated a proper restaurant while hiding a speakeasy in the back that served smuggled spirits and beer. Thirsty restaurant patrons would disappear for a short while, typically returning with a much rosier disposition.
Over the years, legendary figures of the 1920s like Babe Ruth, Clark Gable and Gary Cooper mixed right in with the regulars. This was a place where everyone got top billing, so these three luminaries were just “some of the guys,” sharing stories and a common passion for finding a tasty, quality brew.
After this long and storied history, Don Sullivan bought the historic building with the goal of adding a brewery to honor the rich beer tradition of the owners and patrons who came before him. The Southampton Publick House was reborn in 1996 and began serving great food and superior quality craft brews in a warm and welcoming atmosphere.

A strong, dark ale with notes of raisins, figs, and caramel, and a pronounced “dark rum” character. Deceptively smooth at 10.5% alcohol, this strong ale is ideal as an after-dinner sipping brew.
Abbot 12 is a seasonal beer and is only available in the spring.

Biere De Mars

Biere De Mars
Southampton's Biere De Mars is brewmaster Phil Markowski's classic interpretation of an authentic French farmhouse-style Biere de Mars. Southampton’s version is brewed with a blend of wheat and barley malts and a generous amount of continental hops. It is cool fermented and aged to give it a clean, smooth, lager-like character. This traditional “March Beer” is a delicious amber ale, with a fruity, spicy aroma and flavor notes of pear and honey.
Biere De Mars is a seasonal beer and is only available in the spring.

Grand cru is part of Southampton Publick House’s 750 Series.
Grand cru is a unique and richly complex spiced strong ale. Its harmonious flavors include a range of fruity accents and aromatics derived from an assortment of spices and a special yeast strain.
Grand cru is a seasonal beer and is only available during the winter months.

Southampton Double White

Southampton Double White
Southampton Double White is a truly special brew and a Southampton original. It’s a stronger version of the classic Belgian white ale style.
White Ales (or Witbiers) are called white because their light color and cloudy appearance make them appear almost white. They are unfiltered wheat-based brews with a unique citrus and spice character that comes from the use of orange peel and ground coriander seed in the brewing process.
In creating Southampton Double White, Phil Markowski turned his fascination with the style into a quest to master one of the most challenging beers to brew. Phil stuck to the tradition of using the classic Belgian white ale ingredients like unmalted wheat, oats, coriander and orange peel, but he put his unique spin on the style by creating a “Double White” version.
His version honors the original Belgian white ale style, but it has a little more of everything— more complex orangey/citrusy fruitiness, a slightly fuller body, more alcohol and a more satisfying finish. It’s delicate, balanced and every bit as refreshing as the original style, but more intense.
Southampton Double White is available year round.
Available in both bottles and draft.

Southampton Imperial Porter

Southampton Imperial Porter
This is Southampton brewmaster Phil Markowski’s authentic interpretation of what an Imperial Porter would have tasted like back in the 18th century. Southampton Imperial Porter uses a unique blend of seven malts to give it a deep brown, almost black color and a smooth, full-bodied flavor that bursts alive with a pleasing, warming effect and notes of chocolate, toffee and caramel in every sip.
Southampton Imperial Porter is a seasonal beer and is only available from November – February.
Available in both bottles and draft.

Southampton India Pale Ale

Southampton India Pale Ale
Balance. That’s what separates India Pale Ales, and that’s the difference between the Southampton IPA and most others.
Southampton IPA is balanced between the hopped-up West Coast-style IPAs and the Old World characteristics of a traditional European IPA. You could say that Southampton IPA is located somewhere between Europe and California, figuratively and literally.
Phil uses three grains and a blend of three American and two English hop varieties to make this complex and delicious IPA. It’s full of floral hop aroma and has fruity apricot and grapefruit overtones. It has an assertive hop flavor and a refreshing hop bitterness while still showing plenty of caramel malt character to balance the flavor.
Southampton IPA features more balance than any other IPA brewed in America. The result is an American-style IPA with the Old World characteristics of a traditional European IPA.
Southampton IPA is available year round.
