Paulaner Brewery's History
The oldest document of the Paulaner Brewery Munich dates back to 1634, when the monks would brew beer for their own use. The monks had an extremely hard life as they were extremely poor and had to work very hard in the Munich monastery Neudeck ob der Au. To get them through the difficulty of Lent they would brew a strong beer named Salvator. Any beer that they did not need themselves was passed onto the poor or sold in the monastery taverns. This beer became very popular and soon Munich’s private breweries began to complain to the town council about the competition from the monastery. This letter is regarded as the first official document of the Paulaner Brewery.
The Paulaner monks have officially been allowed to serve beer without restrictions since 1780, and by the end of the 18th century, Paulaners’ annual production is already more than four times as much as that of other Bavarian brewers. Then in 1799 after the dissolution of the Neudeck ob der Au monastery the brewery is briefly leased by the state. Beer brewer Franz Xaver Zacherl acquires the Paulaner Brewery in 1806 and goes on to modernize and expand it. It is now known as the "Zacherlbräu", or "Zacherl’s brewery".
In 1881 the first ice machines by Carl von Linde are installed, which are still at the brewery today. As a result of the invention of the steam engine and the refrigeration machine by Linde, the company is able to achieve a consistent production quality and year-round production. By 1896 there are so many imitators, that the brewery has the name Salvator protected by the imperial patent office in Berlin.
The Paulaner brewery kept growing, and in 1921 acquired share majorities in three highly-respected regional breweries: Hofbräuhaus Coburg AG, Auerbräu AG Rosenheim and Waitzingerbräu AG in Miesbach and Landsberg. Then in 1928 the Paulaner-Salvator Brauerei merges with the Gebrüder Thomass Brauerei, Munich, and in 1985 Hacker-Pschorr Bräu GmbH München and Auerbräu AG Rosenheim become full members of the Paulaner Group.
Paulaner surprises the world in 1986 when they brew the world’s first non-alcoholic wheat beer, Waitzinger Weisse, which is now called Hefe-Weißbier Alkoholfrei. Then in 1987 another innovation: Thomass Bräu Alkoholfrei is launched on the market, one of the first bottom-brewed non-alcoholic beers, now called Original Münchner Alkoholfrei.
What a year! In 1989 Paulaner builds the world’s deepest cellar 22 m under the ground, and introduce Paulaner’s first "light" beer (40 percent less alcohol and fewer calories) and the split Paulaner Zwillingskasten (twin crate), which is much easier to carry. The first brewhouses are also opened: Paulaner Bräuhaus Consult GmbH opens the first brewhouse on Munich’s Kapuzinerplatz as the home of Paulaner Gaststätten with its own brewing operation. Other brewhouses follow, including ones in Peking, Shanghai, Singapore, Cape Town and St. Petersburg. Paulaner continued to develop and in 1996 acquired the Fürstliche Brauerei Thurn und Taxis Regensburg, and founds the Thurn und Taxis Vertriebsgesellschaft mbH.
Paulaner then launched a unique beer specialty on the market, Paulaner Roggen which is a fresh wheat beer, that has the unique taste or rye.
In 1999 Paulaner is on course for the future, as Paulaner Aktiengesellschaft becomes Paulaner GmbH und Co. KG - a modern commercial enterprise, and one of the leading breweries in Germany. Their total sales break the record of two million hectolitres. The upward trend is consolidated in 2000 as the sales of all Paulaner wheat beers easily breaks the record of one million hectolitres.
The Paulanerkeller on the Nockherberg, which burnt to the ground in 1999, is rebuilt in 2001, and the opening is celebrated at the Salvator tasting in March 2003. In April 2001, a joint venture company is set up with the Dutch brewers Heineken N.V., the foundation for national and international growth. Paulaner also continue their international success in 2001 with the opening of two new brewhouses in Budapest and Cape Town. The completion of the basic construction was celebrated on 15 May 2002 with the topping-out ceremony of the new "Paulaner am Nockherberg". The foreman gave the traditional topping-out speech, and Munich’s Lord Mayor Christian Ude and the speaker of Paulaner’s board of management Axel Meermann also spoke. Laptop meets lederhosen: Paulaner’s online garden has been re-designed and is now proud to reveal its new look.
Paulaner presents the first non-alcoholic wheat beer with yeast that really tastes good, and tastes like real beer in 2005. The Paulaner brewery is the first German brewery to launch non-alcoholic wheat beer with yeast on the market, and has now quite literally re-invented it. Paulaner wheat beer with yeast is something special, and is well known all over the world to lovers of the refreshing Munich lifestyle and hospitality. Now you can enjoy the refreshingly sparkling flavor with the fine aroma of yeast, without the alcohol content. The new Paulaner aroma protection process guarantees the unmistakable flavor of our Paulaner wheat beer with yeast. Brewed as a full beer, the alcohol is removed from the wheat beer with yeast very gently. This means that many of the flavor carriers, valuable trace elements, minerals and vitamins are left in the beer. The Paulaner aroma protection process ensures that the resulting beer retains the full-flavored, finely aromatic wheat beer taste.
Paulaner receives the "Megaphon" award in 2007, and can now claim to be responsible for Germany’s best TV advertising. Paulaner won the hearts of millions of TV viewers with its well-known "Indian ads" and the Olli Kahn ad, which received the Golden Camera.
Paulaner celebrates its 375th anniversary in 2009 and launches another innovation, Paulaner Hefe-Weissbier Alkoholfrei (Paulaner yeast-based wheat beer, non-alcoholic) which is now made to an improved recipe. New Paulaner Hefe-Weissbier Alkoholfrei tastes good, is isotonic, full of vitamins, with a calorific value of up to 60% less than that of juices, fruit-based drinks or milk.
To this day Paulaner voluntarily observes the Bavarian Purity Law that was issued by Emperor Wilhelm IV in 1516 which states that only barley or barley malt, hops and pure water may be used for the production of beer.
Today Paulaner beers are available all over the world, and the Paulaner Brewery is one of Munich’s biggest traditional breweries.

100% natural, Hacker-Pschorr Mai Bock is brewed with pure spring water, Hacker-Pschorr’s centuries-old exclusive yeast strain, Hallertau hops and light-colored malt from two-row Bavarian summer Barley. It has a foamy, lacy white head, and is brilliantly clear pale gold, with a malty bock character and a rich German Fest body.
Hacker-Pschorr beers have always been brewed in accordance with the Reinheitsgebot Purity Law of 1516, which mandates that beer brewed in Bavaria consist of only malted barley, water and hops.
