History of the Ithaca Beer Company
The people of Ithaca New York have always had great pride in their city and in locally produced products. They take pride in their many local wineries, and when people began asking why Ithaca didn’t have its own local brewery Dan Mitchell the founder of Ithaca Beer Company set out to answer that question by creating a brewery that would exemplify “The Spirit of the Finger Lakes”.
In 1997 the brewing system for the Ithaca Beer Company was purchased after having passed on another system that seemed adequate on paper, but didn’t meet the needs of the brewery. The discovery of the current brewing system came when Dan was traveling around Texas and visited a brewpub in Austin, Texas. When he asked the brewery what kinds of beer they made they told him they had stopped making beer and were preparing to sell their system. A month later the system was shipped to Ithaca.
After five months of renovation the Ithaca Beer Company at 606 Elmira Rd. was finally ready to start making beer. The company started small with only a couple of people, Dan and Ithaca’s previous Brew Master Jeff Conuel, who did everything to get the business running from making the beer, packaging, selling and the paperwork. Then in December of 98 the brewery officially opened.
The Ithaca Beer Company has come along way since their opening in 1998. They now sell beer throughout New York State, Pennsylvania, Connecticut, Massachusetts, New Jersey, Rhode Island, Ohio and other states are currently in the works. They were also awarded two medals at the Great American Beer Festival in 2008. Even though they have grown significantly in their short time, the Ithaca Beer Company remains dedicated to their community, to creating “quality craft beers” and to capturing “the Spirit of the Finger Lakes”.

This hoppy upstate ale has a golden straw color, intensely sweet floral aroma, crisp grassy flavor and a clean bitter finish. AlpHalpHa is brewed with organic barley malt, NYS grown cascade hops, local alfalfa honey, pure Cayuga Lake water and American yeast.

Brute

Brute is brewed with vintage local hops, American Barley, wheat and corn. It is fermented on Oak for many months with Brettanomyces, then finished with a blend of three Champagne yeasts. Enjoy the turbid citron hue, mature aroma, brash tartness and dry, quenching sparkle.

CascaZilla

CascaZilla
The name CascaZilla is a play on both the name of a gorge in Ithaca called Cascadilla and the monster amounts of Cascade Hops Ithaca Beer Company uses to make this beer. The predominant flavor and aroma of this beer comes from fresh American hops. CascaZilla gets its distinctive red color from a healthy portion of caramel malt, which also lends to the beer, a hearty body and sweetness. It is a hoppy red ale!

Brewed in autumn to keep everyone inspired as the days grow shorter and the nights colder this Belgian-style Amber Ale is brewed with European Malts and hops and fermented with a legendary Belgian "Farmhouse" yeast. So savor its deep russet color, rich flavor accented by slight herbal hoppiness, and definite spicy yeast character, and bundle up!
