The Flying Bison Brewing Company opened for business in 2000, and is a packaging microbrewery located in the city of Buffalo. It was the first stand alone brewery to operate in the city proper since Iroquois Brewing closed its doors in 1972. Tim Herzog, an award-winning brewer with over 20 years experience established Flying Bison Brewing Company in the city of Buffalo to foster the return of what was once a flourishing industry. It’s this commitment that has carried the way for the brewery to become what it is today. Flying Bison also draws its name in part from Buffalo’s rich history of aviation manufacturing. The brewery began operations as a 20-barrel facility, and in early 2004 installed a full bottling line and upgraded its production capacity by adding a 40 barrel fermenter. The brewery has since expanded by more than 200% adding 4 more 40 barrel fermenters and Flying Bison Beer is currently available in Erie, Niagara and Chautauqua counties.

Aviator Red

Aviator Red
Aviator Red is Flying Bison’s premier flagship ale. It is full-bodied and ruby red in color, with a malty flavor and spicy hop signature to balance. Brewed from the finest ingredients anywhere including a blend of six of the highest quality malts which gives Aviator Red its rich malt flavor and signature ruby red color. Only the best hops are used to balance the robust malt flavor to create a beer with a very drinkable finish.
Aviator Red is available year round.

Bisonfest

Bisonfest
Bisonfest is brewed in the traditional German Oktoberfest style. The nutty Munich Malt is the base for the caramel malts that give a beautiful color, and a complex nose of German Malts and hops. The lager yeast lends a smooth, round finish that makes it very drinkable at your favorite Festhall.
Bisonfest is a seasonal beer and is only available for a limited time – released in September.

Flying Bison uses a firm flavored British Pale Malt to build the flavors of this rich and creamy oatmeal stout. The roasted barley lends a coffee-like flavor while the oats give a silky finish.

Blizzard Bock

Blizzard Bock
Although it’s named after Buffalo’s most famous weather event this beer has nothing in common with the harsh bite of winter. In fact it’s smooth slightly chocolaty flavor helps you forget Jack Frost altogether. German pale and Munich malts form the base flavors with hints of chocolate and caramel. Very soft, floral German hops ease the finish into dryness.
Blizzard Bock is a seasonal beer and is only available from November - March.
Available in both bottles and draft.

Pairs with: German cuisine, chocolate, game and Camembert and Fontina cheese.

Buffalo IPA
Buffalo IPA is an India Pale Ale that is slightly dry with a medium to full mouthfeel.
Buffalo IPA is a combination of two big, classic IPA styles; English and American. Flying Bison uses English pale malts as a base, for a firm backbone and solid platform to accept plenty of hops. Then they layer three different hop varieties. First, they add plenty of bitterness to balance the malt, then lots of fresh, hoppy flavor, and finally they dry hop with Galaxy hops from Australia for a bright, tropical fruit bouquet.
Flying Bison’s not trying to blow your head off with IBU's or bitterness. They’re trying to excite your senses with long lasting smells and flavors. Every beer lover knows about the bright, hoppy IPAs from the West Coast, Flying Bison’s just happens to be made on the "West Coast" of New York State.

Buffalo Kölsch 716
Kölsch is a style of German beer that is native to Cologne (Koln), and is one of the most drinkable beers on the planet.
Flying Bison makes Kölsch Style Beer with Pilsner malt, and a bit of malted wheat for a light body and soft malt flavor. The straw yellow color will remind you of the summer sun. The hops are German in variety and are added in three separate doses to balance the sweetness, flavor and bouquet of Buffalo Kölsch 716.
This is the right beer to enjoy on your front porch with your neighbors as you watch the summer sun take its long track across Buffalo’s blue sky. Cutting the lawn can wait until tomorrow.

A light bodied golden beer with a very balanced flavor and a soft, clean finish. Buffalo Lager is brewed with fresh pilsner malt and aromatic German hops. It doesn’t contain the additives or preservatives that are used in other lagers, and it is a great “fist beer of the day”.
